Chocolate Chip Oatmeal Cookies

This is a very simple dessert recipe that anyone can make! You only need 10 basic ingredients, but the outcome tastes like is a soft, chewy, complex, delicious treat. These oatmeal cookies are personally my favorite things to make, and even though I highly recommend you don't eat the raw batter, that tastes almost as good too. This is a really good dessert to share with family, friends, and gatherings! Unfortunately, this recipe is neither vegan nor gluten free, but I will list some alternatives.



For this recipe you will need: all-purpose flour, granulated sugar, light brown sugar, unsalted butter, vanilla extract, rolled oats, baking soda, salt, and semi-sweet chocolate chips. To make this recipe vegan, you can replace the egg with a flax seed egg! You can do this by combining 6 tablespoons of water with 2 tablespoons of flax seeds. You can also simply replace the butter with any type of vegan butter. To make this recipe gluten-free, you can replace the all-purpose flour with almond flour and ensure the oats you are using are gluten-free.

Directions:

1. Whisk together dry ingredients

2. In a separate bowl, use an electric mixer to combine the butter and sugar. Then add an egg and vanilla extract to the mixture

3. Add dry mixture, oats, and then chocolate chips to the wet ingredients

4. Use about two tablespoons of the dough to roll into a little ball

5. Preheat the oven to 375 degrees farhanheit and place the cookies in the oven for 8-10 minutes.

Ingredients and Instructions

1 cup all-purpose flour 120g
1/2 tsp baking soda 3g
1/2 tsp salt 5g
1/2 cup unsalted butter room temperature 113g
2/3 cup light-brown sugar 140g
2 tsp pure vanilla extract 10mL
1 large egg
1 1/2 cups rolled oats 135g
1 cup semisweet chocolate chips 150g1

1. In a medium bowl, whisk together the flour and baking soda; set aside.
2. Combine the butter with both sugars; beat on medium speed until light and fluffy.
3. Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute.
4. Add flour mixture; mix until almost combined.
5. Stir in the oats and chocolate chips. Chill dough for one hour to overnight.
6. Preheat oven to 375 degrees.
7. Use a small ice cream scooper (two tablespoons) to Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
8. Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes.
9. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely.
